Time 2h

Number Of Ingredients 3

Ingredients:

  • 12 fresh peaches, pitted and chopped
  • 4 ½ cups white sugar
  • 1 (2 ounce) package dry pectin

Steps:

  • Crush 1 cup chopped peaches in the bottom of a large saucepan. Add remaining peaches, and set pan over medium-low heat. Bring to a low boil, and cook for about 20 minutes or until peaches become liquid (my family likes a few bits of peach left) .
  • Pour peaches into a bowl, and then measure 6 cups back into the pan. Add sugar, and bring to a boil over medium heat. Gradually stir in dry pectin, and boil for 1 minute.
  • Remove from heat after 1 minute, and transfer to sterilized jars. Process in hot water bath canner for 10 minutes. Let cool, and place on shelf.

Top Asked Questions

  1. What is the best way to preserve Peaches?
This simple, old fashioned recipe includes just 3 ingredients: peaches, sugar, and lemon juice. A nice, slow simmer concentrates the peach flavor and eliminates the need for additional pectin. The result is peach preserves with the most intense, bright, and fresh flavor. Homemade Preserves (Jam) is the Best Way to Preserve Peaches
  2. How much sugar do you put in a peach preserve?
Only two ingredients and a little patience stand between you and the best peach preserves all year round. Measure or weigh your chopped peaches before you add the sugar. The 3.8 kg of whole peaches should yield about 2 Kg chopped peaches or 10 cups. For each 10 cups or 2Kg of peaches add 7 ½ cups or 1,700 g sugar.
  3. Do Peaches have pectin in them?
Peaches contain a moderatelevel of pectin, which is why so many peach preserves and jam recipes include a bit extra. But after years and yearsof making successful batches of homemade peach preserves, I have found that additional pectin is not necessaryas long as you allow the preserves to cook long enough.
  4. How to can peach brandy preserves?
When the peach preserves have become just a bit thicker than your desired consistency, add ½ cup brandy and stir. Ladle peach brandy preserves into hot jars leaving 1/2″ of headspace. Process in a boiling water canner for 20 minutes for 250ml (1 cup) jars. *Note: yes, canning recipes have a lot of sugar.

  • Pour the lemon juice into a large, heavy bottomed sauce pan. Peel, pit and chop the peaches into small, bite-size chunks. Add the peaches to the lemon juice as you chop, stirring with each addition to coat the peaches in the lemon juice which will prevent them from browning.
  • Pour the sugar over the peaches and stir gently to coat the peaches in the sugar. Let the mixture sit at room temperature for 1 hour. *NOTE: The amount of sugar will depend on the sweetness of your peaches. If the peaches are quite sweet, 2 1/2 cups of sugar will suffice.
  • Bring the mixture to a full boil over medium-high heat, stirring occasionally. Reduce the heat to medium and allow to simmer for 1-2 hours, until the liquid has reduced significantly and is thick and jelly-like. As the preserves begins to thicken you'll want to stir more and more frequently to prevent scorching. (To test whether the preserves are done, place a small dish in the freezer until very cold. Spoon a small amount of preserves onto the cold dish, allowing it to cool quickly and providing an accurate sense of how thick the juice is.)
  • Pour the hot mixture into very clean, dry glass jars leaving about 1/4 inch at the top. Using a damp cloth or paper towel, wipe the tops of the jar to ensure a clean seal. Cap and screw on lids, leaving them a bit loose.

  • Cut your peaches in half, remove the pits and peel them. Cut the peaches into even sized pieces; about 1/2 to 3/4 inch in size. Add the peach pieces, water, and piece of fresh ginger to a heavy-bottomed saucepan. Bring the mixture to a boil over high heat, cover the pan, drop the heat to medium low, and simmer for 4 minutes or until the peaches are softened but still have shape and body to them. Remove the mixture from the heat, fish the ginger piece from the peaches, and scoop 4 cups of the cooked peaches into a liquid measuring cup. Add the dried ginger, lemon juice and calcium water and stir well. You can keep any excess for topping ice cream!
  • Pour the measured 4 cups of peaches back into the saucepan and bring to a full, rolling boil over high heat. While stirring constantly, slowly add in and incorporate the sugar/pectin mixture. Stir enthusiastically for 1 to 2 minutes to dissolve the pectin and return the preserves to boiling. As soon as they return to a full boil, remove the pan from the heat.

  • Bring a large pot of water to a boil over high heat. In batches, add the peaches to the water and boil until the skins loosen, 30 to 60 seconds. Using a large skimmer or a slotted spoon, transfer the peaches to a large bowl filled with an ice bath. Peel and pit the peaches, and cut into 1-inch pieces.
  • Mix the peaches with 3 ½ cups of the sugar in a nonreactive large saucepan. Cook over medium-low heat, stirring occasionally, until the peaches soften and release their juices, and the sugar dissolves, 5 to 10 minutes.
  • Stir in the strawberries, the remaining 3 ½ cups sugar, and the lemon juice. Increase the heat to medium-high and bring to a boil, stirring often. Reduce the heat to medium-low to maintain a steady simmer. Cooking, skimming and stirring often, until the liquid is thick and syrupy and the peaches are soft and chunky, about 40 minutes.
  • While the fruit is cooking, sterilize the jars. Fill a canning pot (or other large deep pot with water and bring to a boil over high heat (allow about 30 minutes or more for this procedure, as you are using a large quantity of water). Bring a kettle of water to a boil just in case you need to add more water to the canning pot. Wash the jars, lids, and bands in hot soapy water, and rinse well. Dry the bands. If you wish, use a dishwasher. Jars that are piping hot and fresh out of the dishwasher don’t need sterilizing in a hot-water bath. Do not put the lids in the dishwasher.
