Grandmas Chicken Broccoli Casserole Recipes
This is down home comfort food at it's finest. It was the only way my grams or mom could get me to eat my broccoli while growing up. These days I use brown rice for a lower carb, healthier version. Sometimes I also use chicken thigh instead of breast because it's so much more tender. I hope you love it was much as I do.

- Melt butter in a saucepan. Cook chopped onions in butter until tender. Add flour and cook for about a minute, stirring frequently. Pour in the chicken broth while stirring. Once the flour is incorporated into the broth, add milk and cook until it begins to thicken, stirring frequently.

- Bring a pot of water to a boil. Add chicken and continue to boil until no longer pink, 5 to 10 minutes.
- Meanwhile, combine broccoli, cream of chicken soup, Cheddar cheese, 1/2 cup Parmesan cheese, mozzarella cheese, sour cream, and pepper in a large bowl. Mix well.
- Drain chicken and add to broccoli mixture. Mix well. Pour into the prepared baking dish and spread evenly.
