Outrageous Chocolate Cookies or Bars image

These delicious bars are a family recipe. They are a great combination of chocolate and peanut butter - and the best part is, they use ingredients you usually have on hand. Whenever we take them to parties, they vanish in a flash. To make cookies, drop the dough 2 inches apart on an ungreased cookie sheet. Bake for 10-12 minutes at same temperature.

Ingredients:

  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1/2 cup butter or 1/2 cup margarine
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 cup flour
  • 1/2 cup quick-cooking oatmeal
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 ounces chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Beat sugar, margarine or butter, peanut butter, vanilla and egg until creamy and well blended.
  • Mix in dry ingredients.
  • Add chocolate chips.
  • Pour batter into greased 9-by-9-inch pan.
  • Bake for 20-25 minutes.

Ingredients:

  • 8 ounces semisweet chocolate, coarsely chopped
  • 4 tablespoons unsalted butter
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. Remove; stir until melted and smooth. (Alternatively, place chocolate and butter in a large heatproof bowl set over (not in) a pan of simmering water; stir until melted and smooth) In another bowl, whisk together flour, baking powder and salt.
  • With an electric mixer, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in chocolate mixture. Mix in dry ingredients just until combined. Fold in chocolate chunks.
  • Drop by tablespoons of dough onto baking sheets, 2 to 3 inches apart. Bake, rotating sheets halfway through until cookies are shiny and crackly, yet still soft in centre, 12 to 15 minutes. Cool on sheets 10 minutes; Transfer to wire racks to cool completely.

  • 8 ounces semisweet chocolate, chopped or 8 ounces chips
  • 4 tablespoons unsalted butter
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 12 ounces milk chocolate chips

Steps:

  • Preheat oven to 350.
  • Heat chopped chocolate and butter in microwave safe bowl. Stir every 20 seconds until almost melted. Set aside.
  • Whisk together flour, baking powder, and salt. In a separate bowl, beat eggs, brown sugar and vanilla at high speed until light and fluffy. Beat in melted chocalte mixture. Mix in dry ingredients until just combined. Stir in choclate chips.
  • Drop by spoonful onto a baking sheet - 2 -3 inches apart. Bake for 12 - 15 minutes or until cookies are shiny and crackly but soft in the middle. Cool on baking sheet for 10 minutes and then transfer to rack to cool.
