Mushroom-Bacon Galette image

A freeform tart meant to be ragged and uneven (it's beautiful no matter what you do to it), a galette is just the thing for beginning cooks. This savory version from Dorie Greenspan's "Everyday Dorie: The Way I Cook" is filled with a mix of sauteed bacon, leeks, and mushrooms tossed with fresh herbs, grated Parmesan, and best of all, chopped walnuts -- both the flavor and crunch are unexpected.

  • To Make Pastry By Hand: In a medium bowl, stir together flour, salt and pepper. Cut in butter with a pastry blender or your hands until butter is in fine crumbles throughout (not larger bits as for pastry baked in a pie plate.) Sprinkle in a few tablespoons of water at a time, mixing afterward. Bring it together into a cohesive ball, using water as needed. It should be nice and moist throughout, no dry parts. (It should feel like Play-doh, moist but not sticky.)
  • Gently transfer the pastry circle to the parchment on the baking sheet. Spoon the cooled filling into the center, leaving a 3" or so margin all around. Level off the filling so it's evenly thick, not mounded in the center.

  • In the bowl of a food processor combine the flour, whole wheat flour, salt and pepper. Pulse once or twice to combine. Add the diced butter and pulse until you end up with small pieces of butter, similar to the size of rice. You may also do this in a bowl, using your hands to break the butter into pea size pieces.
  • In a small bowl, whisk together the one egg yolk and 3 tablespoons ice cold water. Add it to the dough and pulse until the dough comes together. If needed add 1-2 tablespoons more ice water. Turn the dough onto a floured work surface, knead a couple of times and then form the dough into a flat disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Toss the delicata squash (you can also roast the seeds for topping!) with olive oil, salt and pepper. Place on a baking sheet with sides and roast for 25-30 minutes or until the flesh is soft and the edges golden.
