- Heat a large sauté pan over medium-high heat. Add few tablespoons of olive oil and cook the turkey sausage until no longer pink. It does not have to be fully cooked through. Remove to a plate.
- Add few more tablespoons of olive oil to the pan; add onions, mushrooms, garlic, and Italian seasoning. Season with salt and pepper, to taste. Cook until the vegetables are tender and no moisture is left in the pan from the mushrooms, about 8-10 minutes.
- In the meantime, bring a large pot of salted water to a boil, and cook the spaghetti according to package directions. Reserve 1/2 cup of pasta water and drain the rest.
- To the mushroom mixture, add cooked sausage, pasta sauce, and roasted peppers. Stir to combine. Then add reserved pasta water and 1 cup of cheese.

- Cook pasta according to package directions to al dente and drain. Set aside. Melt butter in a large skillet. Add squash and onion and saute’ until squash starts to get tender. Add flour, salt, pepper, Italian seasoning, minced garlic, basil, chives and milk. Cook till starts to thicken. Stir in 2/3 cup of the Parmesan cheese and the pasta. Add the tomatoes and ham. Mix to combine all ingredients.
- Remove from stove and pour into a 2 to 3 quart baking dish. Sprinkle bread crumbs and the other 1/3 cup Parmesan cheese on top. Bake in preheated 350 degree oven, uncovered, 30 to 35 minutes.

- Begin by preparing the zucchini. Slice off the tips and spiralize the zucchini. Place inside a colander and sprinkle some salt on the the zucchini. Let the zucchini "sweat" or sit for at least 20 minutes.
- Meanwhile, make the spaghetti sauce. Heat a large skillet to medium- medium high heat. Once the skillet is hot, add the oil, then the diced onion. Saute for 3-4 minutes, then add the miced garlic. Cook for another 2 minutes, and add the ground beef.
- Cook the ground beef, continuing to stir and break up with a wooden spoon. Once meat is no longer pink and cooked through, drain any excess liquid. Return to heat, add salt and Italian seasoning and stir. Finally, add in the tomatoes, vinegar, and tomato paste. Cook for 4-5 minutes, then reduce heat to a simmer for another 10 minutes. While sauce is simmering, heat the oven to 350 degrees.
- Drain any excess moisture out of the zucchini with paper towels. Place half of the zucchini in the casserole dish, then layer with half of the spaghetti sauce. Sprinkle 1/2 cup of the mozzarella on top. Layer with the remaining zucchini, then spaghetti sauce. Sprinkle the top with more mozzarella and the parmesan cheese.
